by hud report staff

Atlanta's Fox Bros. BBQ team, twin brothers Jonathan & Justin Fox, along with Midtown's Smiths Olde Bar have debuted their latest creation, Big Tex Cantina, on West Ponce de Leon in Decatur touting a Texican menu influenced by the brothers home state of Texas. The duo also serves up Texas-style BBQ at their Fox Bros. BBQ DeKalb Avenue joint. The teams have taken three former spaces belonging to Nathalies Fish House, Levis Key West Fish House and a former club and converted them into one large venue named after Justins nickname, Big Tex. Outfitted with checkered-board dining floors, stained-glass lighting, upholstered red church pews, a game room, pool table, darts board, large patio and a rustic looking, fully stocked bar (including 60 beers), the family-friendly Cantina currently serves lunch, dinner and late-night offerings with plans to add breakfast. The Texican menu offers items with a southern twist (no pricing as we went to print) ranging from chicken fried steak, homemade corn dogs and stacked enchiladas to tacos, chalupas and burgers. The housemade salsa is served either red or green and housemade guacamole as well as Texas queso are also featured. Green or red chili cheese fries are also available along with a Texas-style poutine of fries, chili gravy and cheese curds. Salad choices are the mixed greens with queso blanco and cilantro basil vinaigrette; a spinach served with goat cheese, red onion, boiled egg and crumbled bacon; and the king ranch served with buttermilk dressing, Texas toast croutons, cherry tomatoes, sliced radish and carrots. Tacos, served with a side, take the form of the Tex Taco with brisket, mustard, sour cream, grilled jalapenos and shredded lettuce; the frito-crusted fried avocado with chipotle cream, cabbage and pico de gallo (pictured on the cover); a frito-crusted catfish taco with cabbage and jalapeno relish; brisket tacos topped with chili gravy, pico, cabage and queso fresco; grilled chicken; or the scramble tacos made with ground brisket and chuck on a fried tortilla shell with Fox Bros. wing sauce and shredded cabbage. Sandwiches are also served with a side and include a BLT on Texas toast with housemade mayo; a fried chicken or chicken fried steak Sammie; as well as burgers including the classic cheeseburger; the Big Tex burger (one full pound); the Terlingua with mustard, onion and brisket chili; a house made veggie burger (mixture of tofu, black beans, quinoa, sweet potato, onion & corn) with vegan mayo and served with pickled bets, radish and avocado; and the scramble burger made with house-ground brisket & chuck on a toasted bun with mustard, shredded cabbage and Fox Bros. wing sauce. The preliminary menu also listed a lone entree (served with two sides): The West Texas stacked beef enchilada of chopped brisket, chili gravy and cheese topped with onion, shredded lettuce, pico de gallo and guacamole. A sampling of other offerings are the poblano cream corn, beef fajitas, chicken fried chicken or steak, stacked beef enchiladas with chili gravy, cheese stack enchiladas with chili gravy and topped with a fried egg or the chicken enchiladas with mole verde. Among the desserts are the caramel cheesecake apple pie with caramel anglaise and cinnamon whipped cream, the chocolate buttermilk pie with vanilla bean whipped cream and fresh berries along with a Dr. Pepper chocolate cake. Vintage Brewpub...

Originally built as an elegant Victorian-style, single-family home in 1900, the Victor H. Kriegshaber house (a National Historic Register landmark) on Moreland Avenue (in sight of Little Five Points) has made numerous transformations over the decades as a Methodist Protestant church, a dance school and most recently, as the Wrecking Bar that sold decorative antique fixtures. The historic structure has now been restored to its original glory under the ownership of Inman Park residents/homebrewers, Bob and Kristine Sandage. The duo will soon introduce Wrecking Bar Brewpub as a neighborhood gathering spot for craft beers brewed on site and craft pub food. The brewpub, located in the basement of the structure that seats 120 (an additional 20 on the patio) will officially open on Sunday, June 19, while a special events space located upstairs, known as The Marianna, is expected to be completed in the fall. Six distinct areas of the basement give the space an age-old European Pub feel. Each area is defined by antique sconces and a combination of Stone Mountain granite, heart pine floors & tables and warm cypress green walls as well as a wrap-around pine bar that seats 14. Chris Terenzi, who owned the Amber Waves Brewing Supplies in Decatur (as well as assistant brewer at Max Lagers and US Border Cantina & Brewery in Alpharetta), will be at the helm of the specialty brews. From light to dark and hoppy to malty, Wrecking Bar patrons can look forward to selections that run the gamut and may include wheat beers, amber ales, stouts, Belgian ales, German-style beers and cask ales along with specialties like wood-aged and sour beers. The brewpub will also offer a full bar with an emphasis on classic cocktails. Touting a beer-centric menu that embraces craft pub food, Chef Steve Mayer leads the kitchen with locally sourced, all-natural dishes. Originally from Silver Springs, Md., Chef Steve has worked in the Atlanta kitchens of Savu at the W Atlanta - Perimeter, Rosa Mexicano in Atlantic Station and Garrisons Broiler & Tap in Duluth. Beer and food both take center stage at the brewpub, and the craft beers brewed on site are artistically blended into dishes like beer & cheese soup with smoked gouda, beef short ribs in braised stout with stone-ground green chili grits and pan-seared copper river salmon with sauted spinach, sweet potato strings and a golden ale grain mustard sauce. The Wrecking Bar Brewpub will be located at 292 Moreland Avenue, Inman Park. Dinner will be served seven nights a week. For more information, visit www.wreckingbarbrewpub.com.

More BBQ...

Pig N Chik BBQ opened in November of 2001 in the Fountain Oaks Shopping Center in Sandy Springs offering delivery-only at first. In less than a year, there was a nearby move to an expanded space to include counter and sit-down service and the Pig N Chik folks haven't stopped since. Offering real hickory-smoked BBQ and ice-cold beer, Pig N Chik celebrated the opening of their third location last month on Briarcliff Road near the Emory area (the second is on Peachtree Industrial Boulevard). Taking the former Cafe Sage Hill (Dustys for 27 years before that), the team has remodeled (adding a large covered deck) and gotten back to the roots of the building -- serving BBQ. The Family-style BBQ options begin with sandwiches and your choice of one, two or three sides ($5.37 - $10.42) that include pulled pork or chicken, beef brisket, turkey, fried chicken tender, chicken salad or on-the-bone pork rib. Sauces include regular, hot Carolina or mustard. Plates ($7.71 - $22.80) are served with two sides & bread and include the same options as the sandwiches as well as salmon, tilapia and any three sides for a veggie plate. All of the smoked meats are also available by-the-pound in addition to whole pork butts or briskets that feed from 15 to 20. Also featured are the redneck nachos ($6.91) made with cheddar cheese smothered fries topped with chunks of pork and BBQ sauce. Wings (with carrots, celery, bleu cheese or ranch) are available in mild, medium, hot, bbq, lemon pepper or smoked ($4.49 to $26.12 for 40). Salad ($7.43 - $9.30) choices include the fried chicken tender, Savannah Matts chicken salad, smoked salmon and the chefs salad with your choice of pork, beef brisket, turkey or chicken. In addition to a kids menu ($4.50 - $5.90), desserts ($1 - $4.25) include chocolate cream pie, banana pudding, pecan pie, chocolate madness cake, a moon pie or chocolate chip cookie. Pig N Chik is located at 1815 Briarcliff Road, Atlanta, 404.474.9444. For details, visit www.pignchik.net.

Da Vinci's in Midtown

With an original location on Spring Road in Smyrna, Da Vinci's Pizzeria has branched out with a new joint on W. Peachtree Street in Midtown. Da Vinci's Pizzeria was founded as a tribute to the Renaissance man himself (Leonardo) and to the old-world Italian village pizzaiolo (master pizza maker). The Pizzeria's story began a long time ago (about 20 years) and was conceived from hard work and desire by three guys with film degrees: Jason, the food guy; Milas, the bean counter; and Jonathan, the marketing guy. The trio's menu begins with appetizers (.59 - $6.99) of breadsticks, cheese sticks and dipping sauces (garlic butter, nacho cheese, marinara, ranch and blue cheese). Salads ($2.99 - $5.99), with your choice of romaine or spinach, include a house, the Greek, Caesar and a build-your-own. Pasta choices range from a build-your-own ($7.99) to specialty dishes of chicken or seafood Alfredo and spaghetti & meatballs (9.99 - $12.99). Pizza are served in 10”, 12”, 16” or 20” sizes ($5.99 - $24.99) and also range from a build-your-own to 18 specialty versions ($9.99 - $34.99) and four gourmet pizzas including The Soprano, Italian Meat, Shrimp Tease and the Fishermans Wharf with tilapia, scallops, shrimp, broccoli, green peppers, fontina and mozzarella cheeses ($11.99 - $34.99). Specialty calzones (same varieties as the 18 pizzas) are also the menu ($12.99). You will also find a selection of beer and wine at Da Vinci's. Da Vinci's Pizzeria is located at 1270 W. CHEFS' CORNER - Page 4

The Capital Grille, located on E. Paces Ferry Road, turns 10-years-old this month at its penthouse home in Buckheads Capital Building (see story page 10). Corporate Executive Chef Jim Nuetzi shares a recipe to prepare when entertaining at home for one of the most popular items on Capital Grilles new bar menu, the miniture tenderloin sandwiches. Bon appetite.

Yields 12 (prepare Mushroom Duxelle and Herbed Cream Cheese first)

INGREDIENTS:
•12 Steak Tournedos, 2 oz.
•Kosher salt & fresh pepper
•1 cup mushroon duxelle
(recipe below)
•1 cup herbed cream cheese
(recipe below)
•12 miniture brioche buns
•Watercress

METHOD OF PREPARATION:
Preheat a charcoal or gas grill. Also, preheat the oven to 350. Season the tournedos with salt & pepper. Grill them in the hottest part of the grill for two minutes per side, until caramelized on the exterior with an interior doneness of medium. While the tournedos are cooking, place split brioche in the oven to toast. Once they are golden brown, remove them and spread with a layer of herbed cream cheese on each side. Pub fare & cold beer in Olde Fourth Ward...

The folks over at Manchester Arms British Pub in College Park began plans back in early 2010 to introduce another concept to Atlanta, Hill Street Tavern. Last month, Hill Street was the latest of several new places to open in the Pencil Factory Lofts on Decatur Street in the Olde Fourth Ward. The open, tavern-esque space features a wraparound bar that is the centerpiece of the pub with warm lighting, dark woodwork throughout, spacious windows, comfy booths and thick wooden chairs & tables throughout. A separate area offers overstuffed couches for lounging. For entertainment, Hill Street features a couple of dart boards, two TVs, trivia and live music. Although Hill Street offers a daily-changing menu (pricing was not available as we went to print), signature items have quickly become the generous portions of the smoked double pork chops, the porterhouse and thick-cut Guinness-marinated ribeyes that are cured on-premises. Other classic Tavern items on Chef Lees menu may include pecan-encrusted chicken or trout, shrimp & grits or smoked quarter chicken accomplimented by smoked wings, BBQ potato skins with pork and black beans or sweet potato tater tots. Sides of crispy cabbage slaw, baked beans, mashed potatoes are offered among others as well as sandwiches such as the BLT with a fried duck egg, pulled pork, the French dip and a grilled pimento cheese. Burgers, fries and fish & chips may make the list and the condiments, BBQ sauces and relishes are all made in-house. Cold beer (20 on tap), margaritas and signature cocktails are but a few of the libation selections and 'Thirsty Thursdays' features $3 pints. A convenient nearby parking garage gives you three hours to dine. Hill Street Tavern is located at 349 Decatur Street, Atlanta, 404.554.4955. Hours are Sunday – Wednesday 11 a.m. – 12 a.m. and Thursday – Saturday 11 a.m. – 2 a.m. Kitchen closes at 10 p.m. www.hillstreettavern.com was under construction as we went to print.

General store...

Littles Food Store was founded back in 1929 in Atlantas Cabbagetown area and served the area well for many, many years. Although original owner Leon Little still owns the building, new owners have leased the space and created a small neighborhood market to operate as part-grocery store and part-grill with counter-service. The grocery portion of the space is stacked with shelves of household supplies, cigarettes, cheeses, sourced meats, about 80 wines and a nice selection of beer. Mornings at Littles, you will find Community Coffee and pasties from Jonathan St. Hilaire's Midtown Bakeshop beginning around 7 a.m. The counter portion includes, swivel stools, a church pew, checkerboard floors, pendulum lighting and vintage coke vending machines. As part of the dcor, there is also memorabilia of Leon displayed in the new place. Deli sandwiches are currently being served and the grill is expected to fire up soon. Plans were to add a breakfast bar until 11 a.m. and an afternoon offering of homemade comfort-food meals to-go, ranging from baked chicken to roast beef & potatoes. Current lunch specials you might find include a Boars Head bologna & American cheese sandwich on Bakeshop white bread with a Moon Pie and RC Cola for $3.99; a BBQ pork sandwich; ham & bologna with American cheese, lettuce, tomato, & onion on white; or the ham & provolone on croissant with creamy blue cheese, lettuce & tomato for $6.50. Both of the latter are served with macaroni salad and pickle. Although the grillin' hasn't started yet the menu is already displayed above the counter and offers Little burgers ($1.65 - $3.35) of single, double, cheese or vegan. Big burgers ($4.85 - $5.85) are featured with names like The Bigfoot, The Natural and Biggun Vegan along with Not burgers ($1.50 - $5.85) such as the Portobello, chicken, Sabrett hot dog or chilidog and the grilled cheese.
