New de facto 'hangout'
for locals and visitors

For 10 months we have been tracking the progress of a new Roswell neighborhood gathering spot, The Roswell Tap, which was to open in the former Freedlands Pizza building (that burned in '08) on Alpharetta Street. Last month, owners Sean McDonough and wife Tracey, debuted their new eatery in the completely renovated, former historic 1800s house of Roswell's founder, Roswell King. The central dining room, complete with fireplace and a cathedral ceiling, offers views of newly added patio and deck as well as the bar area. A second floor was also added to this new watering hole whose motto is: Be seen. Be heard. Be fed. Overseeing the front of the house is manager, Erin Eikey. Chef Alana Taylor (Atkins Park, Lake Lanier Resort) has constructed a menu of American & Irish cuisine paying tribute to McDonoughs Irish heritage. They serve the original Freelands New York-style thin crust pizza and specialties like the Primanti-style sandwich and homemade sausage, but the Roswell Tap will also offer a special deep-dish pizza made with a butter-crust dough. Little plates at the Tap include fried calamari, mussels, chicken fingers, fried grits, grit chips (that look like fritos and are served with your choice of chow-chow or collard greens and smoked bacon dip), a pretzel dawg (Vienna hot dog wrapped in fresh made pretzel), the potato patch (crispy fries served with slow roasted beef gravy, Irish cheddar cheese sauce and leeks), a pierogi (dumpling stuffed with potato, cheese and a daily favorite filling), a sausage plate (including kielbasa, spicy Vidalia, mild Italian & cheddar cheese beer sausage) and the Taste of the Tap with sopressata, aged salami, prosciutto, olives, assorted cheeses, peppers & a fresh baguette. Wings are served with celery & fries in three styles: Hot or mild garlic, Irish butter & sea salt sauce; rosemary, chardonnay, lemon zest, sea salt & ground white pepper; or the sweet & zesty Coca Cola sauce. The salad selection ranges from the house and Caesar to a spinach caprese and the Pittsburgh with romaine, sea salt crusted steak, fries, cucumbers, grape tomatoes and bleu cheese crumbles. Sandwiches are served with a dill pickle and your choice of slaw, fries or onion rings and include an Italian beef, beer bratwurst, Greek goddess, chicken, shaved turkey and the lobster roll made form lobster knuckle & claw meat sauted in a white wine garlic butter and served on toasted Italian bread. There are also three Sliders to choose from: Angus beef with bleu cheese & Vidalia onion chutney; ground turkey with aged gouda; and chorizo with a fried quail egg and shaved parmesan. The Taps 14” pizzas range from a Buffalo Chicken, the Artless Picasso (with house made marinara, mozzarella, basil & tomatoes) and The Midtown (with roasted garlic, caramelized shallots, toasted pine nuts, a balsamic reduction and mozzarella cheese) to the Tough Guy (double pepperoni and cheese) and the Tap Special (with Angus beef, fresh ground sausage, ground turkey, rosemary bacon, marinara and fresh mozzarella). The full service bar has around 12 beers on tap and 30+ bottled choices along with a selection of bourbons, Irish whiskeys and specialty Irish mixed cocktails among many others. The monthly food, wine & spirits jam session know as the Dinner Party will now have a permanent home. The Dinner Party guys (Patrick La Bouff & Darren Carr of Top Flr) have issued an official statement saying they are moving into the former Beleza/Cuerno space at 905 Juniper Street sometime late summer. The name of the new restaurant has not been revealed yet. The two-year-old Dinner Party will also continue with monthly surprise meals... Advertising on Craigslist for help wanted, Scootz Gourmet Grill has also applied for an alcohol license on Atlanta Highway in Alpharetta... The Del Taco concept has not been in Atlanta for several years and rumors are saying it is making a comeback with a location in Snellville on Scenic Highway sometime in September. Two other locations are rumored to also be happening in Oakwood near Lake Lanier and Arbor Mall in Douglasville sometime in 2012... Local celebrity Chef Richard Blais (Bravos Top Chef All Star winner) is going to be Executive Chef/Partner with Atlanta-based Concentrics Restaurants (One.midtown kitchen, Two Urban Licks, Murphys, TAP, Parish, Lobby, Room) and open a third concept (in addition to his FLIP & HD10 expected in Virginia Highland) in Midtown at 75 5th Street in the former Globe/WaterHaven space. It is expected in late 2011 or early 2012. The Atlanta Business Chronicle is also reporting that Blais is taking his FLIP Burger Boutique concept to Washington, DC and expects to open there by the end of the year. There are currenlty two FLIP locations in Atlanta and one is Birmingham, AL... Creative Loafing is saying that a cross between The Little Tart Bakeshop and Octane Coffee will open in the Jane Lofts on Memorial Drive alongside current residents Six Feet Under and Republic Social House. They expect to open in August... Anthony's Restaurant (opened in 1967), the historic antebellum mansion on Piedmont Road in Buckhead has a new investor and plans are to convert the event space into The Yacht and Polo Club. Alex Suarez, chairman of The Yacht & Polo Club LLC along with 13 other equity members will introduce a semi-private club in the building projecting to sell about 500 memberships: 100 memberships at $2,500 each and 400 memberships at $1,000 each. Although the Club will be open to everyone, membership privileges will include private wine storage, a cigar bar and access to the upper levels of the 1797 home. Initial projections are to renovate the 11,000 sq. ft. club with about $100,000 and reopen in mid-June. Chef Stephen McGuffin will be vamping the menu with a little Cuban flair and tapas items... There is a banner over the former Santoor Indian Cuisine sign on Mansell Road in Roswell announcing another Indian fare eatery, Bombay Express... The first Georgia location of the fast-casual pita concept, Extreme Pita, is still listed as coming soon to N. Point Parkway in Alpharetta on the companys website... Greg Careys (former President/COO of Buckhead Life Group) newest concept, Stir Crazy, is similar to the local The Real Chow Baby and national chain Genghis Grill and will be opening soon in the Town Brookhaven project. (See page 4 for a recipe from Stir Crazys offerings)... Ford Fry, owner/executive chef of JCT. Kitchen & Bar, and Chef Drew Belline, previously the chef de cuisine at Floataway Cafe, are partnering to open a new Italian-inspired, locally driven restaurant in Decatur on July 11th called No. 246. The name reflects the original name of the plot of land on which the restaurant sits, dating back to the early 1900s. No. 246 will present guests with a dining experience that is influenced by seasonality and local products as well as the culinary techniques of Italy... Rajbhog Cafe, located on Pleasant Hill Road in Duluth, is looking to expand with another location in Decatur. The restaurants Facebook page is currently looking for friends to help them name the new concept... Local rumblings are saying it will be late July or early August before the folks over at La Fourchette on Piedmont Road open a sister eatery, Tartufo Pizzeria, in a space next door. Tartufo will feature Italian-style pizzas, salads, gelato and espresso... We are following up on a rumor that Amanda Fore is taking the former Abbadabbas space on East Paces Ferry Road in Buckhead and converting it into a tavern. The new East Paces Tavern will have a full-service bar with a relaxed atmosphere that also features pool tables. Appetizers, sandwiches and entrees with a southwestern/Mexican influence will be offered along with beer, wine and liquor... Augusta, GA-native Jeff Martin will soon be introducing his cupcakery, Smallcakes (named after his daughter), to Atlanta when he opens on Peachtree Road in Buckhead. There are currently locations in Kansas and Missouri.

Itza Sports Bar & Grill opened in McDonough back in November of 2010 touting itself as “the home of the worlds largest taco.” The concept is now ready to expand with locations in Norcross (no address yet) and Midtown in the 1920s bungalow that has housed Leopard Lounge/ER Lounge on 12th Street. Changing up the concept slightly, a seafood/sushi bar will be added at this location but no word on the opening date... Just on the heels of moving his Pharr Road eatery, Cafe at Pharr, to a new location on Peachtree Road in Buckhead and introducing a new location on Atlanta's Westside, owner Johnny Liu is also in the process of introducing another location: An upscale version of the Cafe called Baci Restaurant & Bar that's planned for the Town Brookhaven project late summer... We are following up on info that Jacksonville, FL-based Cami Cakes Cupcakes is opening another Atlanta location (the first is in Buckhead) by taking the former Sweet Pockets space on Paces Ferry Road in Vinings and is shooting for a mid-July opening... Owner Jack Huffy will be opening a fourth Atlanta location of his Jack's New Yorker Deli in July in the Terminus 200 building in Buckhead. Construction on the 2,000 sq. ft. space has begun on Piedmont Road and his other locations are in Smyrna, Marietta and Johns Creek... Look for another Mellow Mushroom in September in The Avenue Forsyth in Cumming. The Atlanta-based pizza chain opened its first restaurant on Spring & 14th Streets in 1974 and has since grown to over 90 locations across the Southeast... Partners Paul Saunders, Sean Galvin and Dennis Young debuted their retail store, The Beer Growler, back in December of 2010 in Athens, GA. The trio now has plans to open a second Metro Atlanta location this month in Avondale Estates. Growlers are refillable glass jugs of 32 or 64 ounces. Customers who come in to buy them are seeking craft beer and will be able to take these for off-premises consumption. The customer then returns the empty container to the store to get it cleaned, sanitized and refilled... We are following up on info that Cafe Intermezzo owner Brian Olson will be opening a fifth location on Peachtree in the 1010 Midtown condominum building. The original location opened in 1979 and this latest one is projected to open in April of 2012... There is a sign on the door of the former ZPizza at the Shops at Spire condos in Midtown saying coming soon Vinny's NY Pizza & Grill. Originally known as Sa'ls Pizza in Norcross and Dunwoody, Vinnys currently has a location on Sugarloaf Parkway in Duluth and the same folks recently opened Mia Ristorante Italiano in Cumming... We are following up on a rumor that Pizza Hut is closing August 1st in Briarcliff Village at Northlake and that Chipotle Mexican Grill will be revamping the building and opening in late 2011... Local rumblings have a new location of the Twisted Taco concept opening in the former Wow Burgers location in Windward Crossing Shopping Center on Windward Parkway in Alpharetta. Not sure of an opening date, the source says the building will first undergo a complete renovation.
Changes...
The new Renaissance Atlanta Midtown Hotel, formerly known as Hotel Palomar Atlanta-Midtown, has converted the former AltoRex to Rooftop 866, its new rooftop bar. The cocktail menu hasnt changed an ounce and the house music remains just as funky. You can sit out on the chic rooftop deck above Briza and order a just-99¢ bowl of housemade potato chips which come with three dip options: chili, peach and Vidalia onion. Theyre also planting new edible stuff for summer (herbs, fruit trees, etc...)... We ran across this tidbit recently in Gayot regarding Continental Park Cafe on Main Street in Stone Mountain, “Sitting atop one of the historic spaces in the Village of Stone Mountain, Continental Park Caf has changed its name to Artisan Restaurant, but ownership and staff remain the same. Although a few new Italian dishes have been added to the menu, the restaurant retains its signature almond chicken salad, which may be served packed into a croissant.”... Gabriels Restaurant & Bakery, located on Whitlock Avenue in Marietta, has expanded by adding an extra room for special events. Owners are Johnnie & Ed Gabriel and they opened in 1996 as a small bakery. Johnnie Gabriel is Chef Paula Deens cousin and has herself written two cookbooks, “Cooking in the South” & “Second Helpings”... Owner Carlos Rodriguez has moved his Duluth Highway La Cazuela Mexican Restaurant to a new home in the former Sperata on the Square space in downtown Lawrenceville. There are also three other locations in Buford, Cumming and Suwanee... We have a heard a rumor that the folks behind the newly shuttered Johnny's NY Pizza on Church Street in Decatur will be revamping the place and reopening in a few weeks as a new concept, Rocket 88.
Updates...
New York-based 5 Napkin Burger owners, Andy DAmico, Simon Oren and Robert Guarino are well underway with renovations on the former Nickiemotos space on Piedmont Avenue in Midtown. A late July, early August opening is projected. The pan Asian eatery, Nickiemotos, had operated in the space since 1998 before shuttering its doors in December of 2010... The newly branded Big Game Brands (formerly Raving Brands) is introducing two new locations of its latest concept, Cowlicks Yogurt & Floats. Its rumored that the two units, one in Vinings and the other in Dunwoody (opening late July), are going into former Planet Smoothie spaces which was originally under the Raving Brands umbrella of concepts... Latest buzz says to expect an August opening from the folks behind Napoleons Grill in Oak Grove, Ryan Aiken, Sean Keenan (Front Page News, Tijuana Garage) & Chris Blanchard (Carrabbas Italian grill corporate trainer) who are taking the former Cantina El Tesoro bungalow in Decatur and turning it into Harbor Bar & Fish House. The new seafood concept will serve steamer baskets, lobster, sauteed clam cakes and hot shots -- which are oysters with tequila key lime butter... We are following up on a rumor that the folks behind Inc. Street Food and Salt on Canton Street in Roswell may be opening another concept across the street, Little Alley Steak, that might make a fall appearance? The same owners also previously operated Little Alley... After operating online since September of 2010, Steve Woodruff's The Great Cupcake Company has taken a retail space on Peachtree Road in Buckhead... A national newsletter is reporting that owner John Agri has sold his Quanto Basta Restaurant on Buford Drive in Cumming to new owners Ron Magliochetti and Eric Webber and the duo has expanded the eatery with an events space next door. Charles Richard Sykes is the new executive chef. John Agri was also part of Por Fin Mexican and Flippin' Out Burgers in Johns Creek that have both closed. Agri just recently opened a new Italian eatery, Dal Cuore, in the former Por Fin space and opened Burrito Gorrila in the former Flippin space a couple of months back... Located on East Paces Ferry in Buckhead for several years, Park Bench closed abruptly in late 2010 amid rumors they would be reopening in a 6,600 sq. ft. space on Irby Avenue. It finally looks like that might happen soon as the local hangout has applied for its liquor license... In other reopening rumors, back in February we had heard rumblings that Urban Flats was thought to be reappearing in its former space at Lindbergh City Center. It too has recently applied for a liquor license on Piedmont Road... The Glenwood in East Atlanta Village has been closed for renovations since January of this year. We are now hearing rumblings that they may be reopening sometime in July?... Latest rumblings are saying Aces Bar & Grille that closed in May will be reopening as Jaks All Inn. The new gastropubs name comes from the owners initials, Josh Adam Kahn (JAK) and is located on Hosea L. Williams Drive in Kirkwood... Tsunami Taqueria, planned for the former Toulouse space on Peachtree Road (it closed last November after 10 years), has set a grand opening date of July 18th. According the Facebook page, Tsunami also hints at opening a second location in Decatur.
Chefs shuffle...
As pastry chef at Cakes & Ale in Decatur since its opening, Cynthia Wong has announced she will be leaving and joining the staff at Hugh Acheson's Empire State South on Peachtree Street. Cakes & Ale is currently working on a new location in Decatur to make the move to a larger space in July... Mixologist Paul Calvert has left his position at Sound Table in the Old Fourth Ward to join the crew at Hector Santiago's Pura Vida Tapas on N. Highland Avenue in the Poncey-Highland neighborhood... Chef Ian Winslade (formerly with 5th Street Cafe, Buckhead Bottle Bar, Market, Spice Market, Thrive, Shout, Bluepointe, Tomtom & Prime) has joined the team over at Murphy's in Virginia Highland as the new Executive Chef.... After joining the team 11 months ago, Chef Gary Mennie has left Table 1280 at the Woodruff Arts Center. He had left Livingston restaurant to take the position. No word on his where abouts.

Sign of the times...
Overnight it seems, Rob Forest had replaced the two-month-old Tifosi Gastropub on S. Main Street in Alpharetta with a new concept, Poquitos Cantina. Tifosi was opened in a refurbished KFC building in February as a gastropub and just as quickly as the change was made, Poquitos also closed up shop overnight... Atlantas cupcake girl, Lennie King, has posted a message on her Sweet Pockets Cupcakes site: “Thanks Atlanta for a wonderful 4 & 1/2 years! It has been a exciting adventure from the early days at the Beehive Co-op and King Circle Market in Peachtree Hills to the fun days at Irwin Street Market with Jakes Ice Cream to the past 3 years in fabulous Vinings! I will miss it all.”... Candi's For Breakfast entered Inman Park's Irwin Street Market in early 2010 offering breakfast-only in its bright yellow and white digs. Last month, Candi's left the brick and morter location to begin traveling from one local market to another selling their wares... Restaurateurs Shane Touhy (formerly with Blue Ridge Grill) and Scott Black (formerly GM at Bones and Blue Ridge Grill) have closed their three-year-old Dogwood Restaurant on Peachtree Street in Midtown. Here's their info: “Dogwood Restaurant, located at 565 Peachtree Street, Atlanta, is closed as of Tuesday, June 14, 2011. While Dogwood has been overwhelmed by the support of loyal customers, the current economic environment and lower than anticipated sales have led ownership to make this unfortunate decision. Dogwood is appreciative of the remarkable service and support offered by its team of employees and put forth by all of its partners and vendors. The team remains proud of the impression Dogwood made on the Atlanta dining scene.”... Java Blues arrived 10 months ago in the former ChocoLate space on Lavista Road serving up hot coffee and cool tunes much like the small Delta junk joints and concert halls where the blues were born. The bluesy coffeehouse has sadly closed up shop... Less than a year ago, Jesup, GA-based Billy Jacks Bar-B-Q & Shrimp Co., opened on Collier Road in West Atlanta. Here's the current message from their Facebook page: “Unfortunately, we are going to close our doors. Our last day of business is currently scheduled for this Friday, June 24th. Thanks to all our FB friends for loyalty and support.”

Maki Fresh...
John Cassimus, (of the Zoes Kitchen chain founded in 1995 by his parents Zoe & Marcus Cassimus), has taken the former Boneheads space in the Peachtree Battle Shopping Center and converted it to another concept, Maki Fresh Sushi Rolls & Japanese Grill. Maki (pronounced MAH-key) Fresh gets its name from the Japanese word for roll and in addition to sushi rolls, this new fast-casual eatery also offers sliders and maki bowls as well as salads and sushi. A la carte items ($2.50 - $4.95) begin the selections with shishito peppers, grilled edamame, onion rings, tempura green beans, miso soup and a seaweed salad. Salads ($2.50 - $9.95) range from the garden, seared ahi tuna and salmon to a chicken salad and the maki chopped with grilled chicken, cucumber, carrots and tomatoes with a sesame ginger dressing. Sliders ($7.95 & $8.95) are served with a choice of green salad, onion rings or rice and include burgers, chicken and grilled salmon. Maki bowls with white or brown rice ($7.95 - $8.95) and sashimi ($8.95 - $12.95) are also offered along with several signature sushi rolls ($5.95 - $11.95). Twenty-Two Storys...
An Atlanta landmark since its inception in 1967, Hyatt Regency Atlanta in the heart of downtown on Peachtree Street, was the first contemporary atrium hotel in the world. The hotel is currently undergoing a $65 million transformation that includes the new Twenty-Two Storys, a beer forward dining concept based on local flavors located in the lobby. Named for the 22-story atrium, Twenty-Two Storys offers guests a selection of drafts from Atlanta-area breweries (Terrapin Beer Co., Sweetwater Brewing Co. and JailHouse Brewing Co.), as well as entrees and appetizers incorporating local beers and ales. The Twenty-Two experience also includes a nod to the Hyatts legacy, including recollections of famous guests, historic milestones and amusing facts from the hotels more than 40 years of service - all featured throughout the space. Over the years, the hotel has served as a base for the Civil Rights Movement and hosted every modern U.S. president. Chef Martin Pfefferkorns beer and ale based menu begins with Appetizers ($11 - $14) such as the Pataks Landjager (soft pretzel with sweet horseradish and spicy malted mustard), Sweetwater Schwheat steam mussels, and sloppy Joe pork sliders and continue with Southampton-plum scallops, beer cheese nachos with pickled jalapenos, hops smoked chicken wings, brisket & cornbread poppers with root beer BBQ sauce and slow roasted chicken quesadillas. Marietta's Botekim...
A piece of Rio de Janeiro is bound for Marietta in the form of Botekim Brazilian Bistro, serving up authentic, simple, affordable Brazilian fare on Terrell Mill Road. Botekim is the vision of restaurateur Alex DeGrossi (Sal Grosso Brazilian Steakhouse, Luckie Food Lounge, Market W Buckhead and Bistro Niko) and his friend Joao Marcos along with the help of chef/consultant Ian Winslade (TomTom, Prime, BluePointe, Spice Market, Market by Jean-Georges and Buckhead Bottle Bar). A sampling of the trios dinner menu includes Aperitivos (Appetizers) of bolinho de aipim com carne (yucca fritters, ground beef and sweet malagueta pepper sauce), linguica de porco acedolada (Brazilian pork sausage with caramelized onions and toast points), iscas de peixe (fish sticks & tartar sauce), iscas de frango (chicken fingers and honey mayo), croquetes de carne (braised beef croquettes with Dijon mayo sauce) and sopa do dia (soup of the day). Saladas (Salads) available are the agriao (watercress, Bibb lettuce, tomatoes, spicy roasted pecans and house vinaigrette), da casa (mixed greens, tomatoes, cucumber, carrots, radish, avocado with grilled white cured cheese), caprese (tomatoes, mozzarella, basil, shaved Parmesan cheese and croutons) and camarao (steamed shrimp, mixed greens, avocado, enoki mushrooms, tomatoes and beurre blanc). Sandwiches of pork sausage, free-range chicken and filet mignon are on the menu as well as a cheeseburger. Porcoes (Sides) range from white rice, black beans, French fries and fried bananas to fried yucca, mashed potatoes, grilled hearts of palms or asparagus and toasted yucca flour with bananas. There are also platters offered with an assortment of cheeses, pickles, jams, cured meats, liver pate, gorgonzola mousse and toast points. Wine, beer and a variety of cocktails are also offered. Cafe Istanbul has been serving authentic Turkish cuisine on Lawrenceville Highway in Decatur for several years garnering local rewards for ambiance and fare. Local restaurateur Randy Stewart (Longhorn, Teds Montana Grill) has taken the former Athens Pizza Express building on Clairmont Road in Decatur and transformed it into a quirky eatery called Kitschn 155. Franchisee Phil Wilkins has rights to 28 stores in the Atlanta area and is also expected to open units in Johns Creek and Alpharetta sometime this summer. Julia LeRoy (The Bookhouse Pub, Shauns, Woodfire Grill, Seegers) will soon be debuting her latest creation, LeRoys Fried Chicken, along with Fellini's Pizza/La Fonda Latina owners Clay Harper and Mike Nelson on Atlantas Westside. The three also introduced a gourmet yogurt concept last year, Three on the Tree in Buckhead, with LeRoy acting as guest confectioner. This new venture seems very similar to Delia Champions (Flying Biscuit Cafe founder) Delia's Chicken Sausage Stand in East Atlanta that opened in April and serves up several versions of Delia's chicken sausages. Opening next door to La Fonda Latina on Howell Mill Road, LeRoys new fried chicken take-out joint will only be using natural, local Springer Mountain Farms birds and will be frying them up the old-fashioned way -- in lard. The menu was still be developed as we went to press, but other menu items being tossed around included collard greens, buttermilk biscuits, hand-cut fries, coleslaw, mac n cheese and fried chicken hearts & livers. Expected to open soon in the Town Brookhaven project, Stir Crazy Fresh Asian Grill will be offering meals similar to The Real Chow Baby and Genghis Grill concepts. In addition to 50 menu dishes, Stir Crazys Market Bar lets you create your own wok-tossed meal. Choose chicken, beef, seafood or tofu and add noodles or rice. Load up on veggies and pick one of the housemade sauces, then watch as the wok chef fires up your creation right before your eyes. This months recipe, Blazing Noodles With Steak, is featured on the menu and is also available with chicken or shrimp.
Serves 4
INGREDIENTS:
•2 tbsp. canola oil
•12 oz. flank steak, sliced 1/4” X 1”
•4 oz. julienned carrots
•4 oz. scallions
•2 cups Blazing Sauce
(recipe below)
•4 oz. snap peas
•2 oz. sliced Fresno pepper
•16 oz. wheat noodles/fettuccini
•1 tbsp. cornstarch
•1 tbsp. water
•1/2 cup julienned basil
METHOD OF PREPARATION:
Note: Depending on the size of your home wok you may have to split this recipe in half. Chicken or shrimp can be substituted for the steak. In a cold wok, add the canola and heat the oil to a light smoke. Add the sliced flank steak and sear on all sides. Cook the flank steak about 75%. Add all of vegetables to the wok. Cook everything for 1 minute, stirring constantly. Add the Blazing sauce and bring to a hard boil for approximately 1 minute, making sure that the steak is fully cooked at this point. Stir/toss - in the noodles and bring the sauce to a second boil for 1 minute. Mix the Cornstarch and water together. Add cornstarch water to thicken the sauce. Bring to boil. Once the sauce has thickened: Remove from heat and toss in the julienne basil making sure to evenly distribute the basil.
BLAZING SAUCE
INGREDIENTS:
•1 1/2 cups chicken broth
•1 tsp. mushroom soy sauce
•1 tbsp. sugar
•1 tbsp. chopped garlic
•1 tbsp. oyster sauce
•2 tbsp. fish sauce
•1 tbsp. chili paste
•1/2 tbsp. Sriracha hot sauce
METHOD OF PREPARATION:
In a medium sized mixing bowl combine all ingredients. Using a whisk, combine thoroughly. Transfer into a storage container, cover well and refrigerate.

Gwinnett natives Ben Bailey and Chris Collin have introduced the newest gastropub, Local Republic, to the downtown Lawrenceville scene. Local is a common term for pubs in Europe and the duo founded their tavern on the belief people want good food, wine and craft beer in a friendly environment. The new digs are located in a converted 1940s service station designed for an eclectic feel. The interior displays original work by local artists along with background music and an intentional omission of TVs to encourage conversation. Sourcing natural, organic, hormone & antibiotic-free ingredients another omission at Local Republic is fried foods from the menu. Fado (pronounced fuh-doe) Irish Pub & Restaurant on Buckhead Avenue in Buckhead is rolling out a summer drink menu that features new and traditional beer-based cocktails as well as Guinness Mixers. In 1995, when Bill Norman began building his restaurant on 3-acres in south Forsyth County, everyone told him he was crazy. They all said, “Youre building a restaurant in the middle of nowhere. Itll never make it.” As a native Atlantan, Norman had been visiting the area since childhood and had lived on Lake Lanier for almost twenty years. Bill began his restaurant career at The Marriott at the age of 14 and later moved on to Victoria Station, where he spent 12 years as a Kitchen/General Manager. In 1982 he left Victoria Station to become Chief Operating Officer of the new Longhorn Steaks concept and went on to help open 52 restaurants in his eleven years with the company. He left Longhorn in 1994 and took a year off before realizing he wasnt really ready to retire. He began the search for a spot near home to bring a new look to the restaurant industry. Naming his new restaurant concept in honor of his father (a B-24 pilot during WWII) he originally envisioned a restaurant inside a hollowed-out B-24 bomber, along the same lines as the Victoria Station train car concept. Unfortunately, old B-24 bombers were hard to come by, so as an alternative, he decided on a fish camp-style log cabin and Normans Landing was born. Since 1995 Normans Landing has contributed over $1,004,000 to organizations, agencies and schools located in Forsyth County. At Normans, The Lures (appetizers $4.95 - $14.95) begin with fried catfish fingers, baby back ribs, cheese sticks, an Alaskan King crabmeat cocktail, shrimp cocktail, a crab cake, scallops, calamari, chicken tenders, onion rings, Boston clam chowder, fried pickles, fried grouper fingers, Buffalo-style wings and shrimp served a variety of ways (grilled, Cajun, lemon pepper, fried, BBQ or wild & spicy) along with fried, steamed or raw oysters. The Lines (sides $2.75) offered include a house or Caesar salad, grilled potatoes, rice, onion rings, mashed potatoes, baked potato (also sweet), sweet potato fries, collard greens, cole slaw, tomato slices, cottage cheese, fries, sauted mushrooms and a vegetable-of-the-day. Specialty salads ($5.95 - $13.95) are also on the menu including the house and the Caesar, which can each be topped with your choice of chicken, shrimp, salmon, tilapia, NY strip and Alaskan king crab. Seafood dishes ($11.95 - $29.95) are served with two sides and range from grilled salmon, tilapia, scallops, shrimp, lobster tail and crab cakes to tilapia, a seafood kabob, trout, fish & chips and a po boy sandwich of either fried shrimp or oysters. 23-year-old Open Hand, the community-based nonprofit organization providing comprehensive nutrition care, recently held its largest annual fundraiser, the 19th Annual Dining Out for Life event at more than 100 metro Atlanta restaurants. Participating restaurants donated 20% or more of each diner's bill and through restaurant contributions, sponsorships and individual donations, this years event has raised over $130,000. High-profile judges including CNN Features Editor Cybil Wallace, Food & Wine Restaurant Editor Kate Krader, Bon Appetit Restaurant Editor Andrew Knowlton and registered dietician, food journalist and nutrition expert Carolyn ONeil will be choosing the best dish, best beverage and best table decorations.
